A species originating in northern Spain, in the region of Catalonia, where it is the main source of olive growing. The tree is relatively small, tends to grow lateral and responds well to pruning (even aggressive pruning). Its fruits are small and round. It is very suitable for dense but problematic planting. The oil shaker is considered very good but has low chemical stability due to high percentages of linoleic acid (omega-6 fatty acid) which contributes to instability.
With the development of advanced olive picking methods, Zen is common throughout the world, especially in Argentina and Chile. Suitable for growing in a variety of climates and types of land, and olives ripen relatively early.
The strain is characterized by relatively high yields and low intermittence. Arbakina has a pleasant floral aroma and prominent fruits. You can notice the flavors of green apple and almonds. The oil is delicate, without bitterness and sharpness and is very much loved by chefs.
